Why do some people rinse the tea leaves before brewing?
To open up the rolled tea leaves so they will accept water more readily, to rinse off any dust on the tealeaves. Some people believe that allowing the leaves to sit 30 seconds in the teapot and then rinsing out the water gets rid of a great deal of caffeine. Although this has yet to be proven by any scientific method.
Why does my tea sometimes taste bitter?
Generally bitterness is caused by over steeping the leaves or the wrong water temperature.
How can I tell what is the correct temperature for my tea?
The tea seller of your tea should have that information. Generally, a good temperature for Black tea is boiling water~210 degrees; Oolong tea ~180-205 degrees, Green tea 170-185 ( Steam begins to leave the spout of the teapot at this point), White tea ~165 degrees. Delicate white tea is a good canidate for cold infusion. Some people prefer to use the cold water method for ice tea while others use the correct hot water temperature and then let the tea sit. Due to the increased bacteria, Sun Tea is not recomended by SpecialTea Pots.
What type of tea should I use in my Yixing teapot?
You may use any tea you wish in your Yixing teapot, Just remember to stay with one type of tea. If you start with English Breakfast, you may use any kind of black tea. For example, Irish Breakfast, Ceylon, etc.
